Cold noodles served with an intensely savoury chicken and fish dipping broth, enriched with miso, sesame and bonito.

GYOKAI TORI CINTAN

Clear, light and remarkably deep.

A delicate combination of chicken and seafood broth, finished with shoyu tare and fragrant niboshi oil.

TORI PAITAN

Rich. Silky. Collagen rich.

Chicken broth slow-cooked for over 12 hours, finished with shio tare and fragrant niboshi oil for deep, savoury flavour.

KAKI SHIO

Our signature oyster ramen.

Creamy chicken paitan meets delicate seafood broth, enriched with oyster purée and fresh Japanese oysters.

Our noodles are made entirely in-house using a custom blend of locally milled flours formulated to match the protein profile of Japanese flour.

Every batch is mixed, rested, rolled and cut before being aged for 4 to 5 days.

Time develops a firmer bite, better texture and deeper aroma.
